Homemade Marshmallows

The thing is… store bought marshmallows gross me out. Homemade marshmallows, well they are good enough that they make it into my yolky coffee before breakfast even comes. That is sayin’ something. They are effortless to work into your weekly meal prep routine with simple ingredients and quick preparation. They are a great blood sugar level stabilizer, hence what goes down real nice with my morning beverage upon waking. Marshmallows are a tasty punch of protein, sugar, and minerals. It is time to up that hygge game and an addition of marshmallows into any warm milky beverage, add a cozy beverage, a fire burning, a good read, don’t tell me I am the only one? Savor. 


Ingredients:

  • 6 Parker's Old Time Farm egg whites

  • 1/3 cup water

  • 2 scoops or 2 tablespoons of gelatin 

  • 1/2 cup Parker's Old Time Farm maple syrup

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon salt

  • 1 teaspoon cinnamon (optional)


What you will need:


  • Stand up mixer (with whisk attachment) or hand held mixer

  • small pot

  • 12x8 inch pan

  • Spatula

  1. Beat 6 egg whites to soft peaks with your stand up mixer (can substitute hand held mixer). Start at medium speed and then turn up to high speed after a couple of minutes.  It will most likely take a handful of moments to form soft peaks.

  2. Add water to a small pot, then add gelatin and quickly whisk. Allow to bloom for 5 minutes.

  3. Heat gelatin mixture on medium heat, whisk until completely dissolved. Add maple syrup and salt, keep whisking until thoroughly blended. Turn off the stove just BEFORE your mixture comes to a boil. Add vanilla extract and whisk.

  4. Slowly pour the gelatin mixture into the  stand up mixer bowl with the egg whites once finished. Beat for 30-60 seconds until light and fluffy. Scrape the sides of the bowl with your spatula and continue to beat to ensure everything is well mixed without any clumps. 

  5. Pour the marshmallows into a 12×8 inch prepared pan and use the spatula to spread them evenly throughout the pan. Be ready to do this step quickly before your marshmallows begin to set.  Cover and refrigerate for a handful of hours until fully set.

  6. Take the marshmallows out of the fridge, now is the option to sprinkle a small dusting of cinnamon across the top of your marshmallows.  Now they are ready to slice into squares. Keep in an airtight container in the fridge for up to a week. Enjoy these in your warm milky drinks or alone as a healthy sweet little snack.
